I noticed that Bosch does not make after market spark plugs for the s197 GT model mustang. What else is good out there that is not factory?

Honestly, the motorcraft plugs are plenty good until you get into forced induction or nitrous.
Stock, you won't really see much benefit to aftermarket plugs.

Autolite and Brisk both make good performance plugs for your application.

Just remember that ford changed the spark plug design mid year 08.

I would never put Bosch into anything that says Ford. Even my Yamaha motor hates them.
